Pod CharacteristicsSour tamarind pods are generally flatter and more curved than sweet tamarind pods. The shell is thick and hard, dark brown in color.
TextureThe flesh is dark brown to almost black. (When fully ripe) The flesh is wetter and has a higher moisture content than sweet tamarind. The fibers (tamarind pulp) are usually hard and firmly attached to the flesh.
TasteIt has a uniquely strong (acidic) taste, resulting from its high tartaric acid content. The sourness should be clean, not sharply bitter or having a rotten taste from poor preservation.
AromaIt has a clean, fruity aroma of citrus. When used in cooking, it effectively masks the fishy smell of meat and seafood.
Medicinal PropertiesHelps boost immunity and prevents scurvy. And it’s a better laxative than sweet tamarind.
StorageSour tamarind (seedless) can be stored for a long time by compressing it to remove air, or storing it at a low temperature to prevent it from turning black.
